Yogurt Parafait

1 cup Whole Fat Creamy Yogurt

1 Avocado

1 Tbsp Chia Seeds

1/2 cup Mixed Berries (Strawberry, Raspberry, Blackberry, Blueberry)

1/2 cup Mixed Nuts chopped (Almonds, Pecans, Walnuts, Pistachios)

(optional) 1 Tbsp Hemp seeds or 1 Tbsp Flax meal or 1 Tbsp coconut shavings

Mix yogurt and chia seeds (overnight if possible), mix in berries and chopped nuts and top with avocado slices

Scrambled Egg (or Tofu)

3 Eggs

(vegan option)1/2 cup Tofu and 1 Avocado

1 cup Kale or Spinach

4 Mushrooms chopped

1 medium Carrot

1 medium onion

1/2 Red Bell Pepper

1tsp thyme and oregano

Saute onions till brown, add thyme and oregano and salt, add a red bell pepper and saute till fragrant, now add veggies and saute. Finally add egg or tofu and saute till cooked. Add Avocado on top.
